Erythritol is a popular sweetener in Monk fruit and stevia sweeteners. For this reason, it is important to know that it can increase your risk of a stroke. It does this by increasing the sensitivity of our platelets to clotting factors. According to research, after one erythritol-sweetened beverage, the subject's blood levels of the sweetener were 1000 times higher and maintained it two days later.
